ZAKU® Knives 2026 Made in Japan.

Damascus Knives

On a Japanese kitchen knife, damascus is a cladding: layers of softer steel folded around a hard core and etched to show the pattern. The core does the cutting, and the pattern on each blade is different.

About Damascus Knives

Our damascus knives use VG10, SG2 or Ginsan stainless cores, which are easy to care for, or a semi-stainless SLD core, which needs drying soon after washing. Shapes include santoku, gyuto, petty, nakiri and kiritsuke, from 95 to 270mm.

Handles come in ebony, stabilized wood, buffalo horn and walnut. Every knife is made in Japan.
